Gratin Blu is the "bleu" with an irresistibly delicate taste, an excellent cheese, internationally awarded by International CheeseDairy Awards, World Cheese Awards London and TuttoFood Milano. It is produced with pasteurized cow's milk and left to mature with an inoculum of noble Pennicilium Roqueforti molds. Its white and slightly glanced paste is characterized by blue streaks. Its flavor is a delicate balance between the sweet, creamy notes of butter and the aromatic nuances of the blue cheese. A real poem for the palate. Also ideal for cooking. DETAILS Rind: is brown and often has characteristic white and yellow molds. Rind is not edible. Paste: white in color and compact but fuseable in the mouth. It has characteristic and widespread blue streaks. The flavor is a delicate balance between buttery notes and the piquancy of the marbling. Maturation: the cheeses are matured in a cool and humid environment, on white fir boards, for a period of 60 days.
