Cut, packaged and shipped directly from our farm store. Whole wheel in photo: 4,8Kg ca. TOMA cheese is a typical dairy product of the alpine valleys of Piedmont. Toma Biellese is produced with whole milk from at least two consecutive milkings of the indigenous cattle breed of the valleys of Biella, the "Pezzata Rossa d'Oropa", fed on grass and hay, according to traditional methods. Its soft but compact texture makes it ideal for long aging, up to 4 months. At the end of maturation Toma Piemontese reveals a sweet and herbaceous taste thanks to the organoleptic characteristics of mountain milk and the care taken in its processing. A pillar of Biella's gastronomy. DETAILS 100% Made in Italy Rind: it is thin, grey-brown in color. The seasoned cheese may present yellow and red colored molds. The brand "Toma Biellese" is impressed on one side. The rind is not edible. Paste: white in color with straw-colored nuances, it has diffuse, thin and regularly distributed holes. Its flavor is intense and harmonious. Maturation: the cheeses are aged for 45-120 days in underground rooms on spruce boards.
