GUARANTEED QUALITY Selected cheese, aged according to traditional methods in the cellars of Caseificio Rosso, in Biella, Piedmont. Cut, packaged and shipped directly from our farm store. Whole cheese in photo: 2.4Kg approx. Pecora Blu is the intense "bleu": produced with pasteurized sheep's milk and placed to mature with the inoculation of noble molds Pennicilium Roqueforti. At the end of the maturing process, its compact and creamy paste is bloomy and expresses its strong and spicy taste. Ideal also for cooking. DETAILS Rind: it is grey-brown and often presents characteristic white molds. On the plate you can see the holes made to favor the marbling. Rind is not edible. Paste: it has a straw-yellow color. The inner part is more compact and crumbly while the outer part near the rind is creamy. The typical veins of the cheese are present. The piquant and intense flavor is due to the marbling. Maturation: the cheeses are matured in fresh and humid environments, on white fir boards, for a period of 60 days. Use: refined table cheese, it is also used in cooking for the preparation of typical dishes. Ingredients: Pasteurized sheep's milk, salt, rennet, calcium chloride, milk enzymes, aging molds.
