GUARANTEED QUALITY Selected cheese, aged according to traditional methods in the cellars of Caseificio Rosso, in Biella, Piedmont. Cut, packaged and shipped directly from our farm store. Whole cheese in photo: 2.4Kg approx. Capra Blu is the intense "bleu": made from pasteurized goat's milk and placed to mature with the inoculation of noble molds Pennicilium Roqueforti. At the end of the maturing process, its compact paste is bloomy and thus expresses its strong and pleasantly spicy flavor. Also ideal for cooking. DETAILS Rind: gray-brown texture and appearance. Rind not edible. Paste: white solid structure of with abundant development of molds. Compact and sustained consistency. The flavor is spicy and strong. Maturation: the cheeses are matured in fresh and humid environments, on white fir boards, for a period of 60 days. Use: refined table cheese, it is also used in cooking for the preparation of typical dishes. Ingredients: Goat's milk, salt, rennet, milk enzymes of which Penicillium Roqueforti.
