GUARANTEED QUALITY Cheese produced with local milk Matured according to traditional methods in the cellars of Caseificio Rosso, in Biella, Piedmont. Packaged and shipped directly from our farm store. Whole wheel in photo: 320g approx. Castelrosso 1894 is the Castelrosso of the "i Piccolini" line, an ideal format for gifts and tastings. Refined and complex cheese, produced from local cow's milk, whole and pasteurized, with rested milk processing. It is said that this production technique was born a long time ago from a mistake: probably badly preserved milk. Today it allows us to produce some of our best creations. We let the milk rest in the processing tanks for the time necessary to develop different acidity characteristics and initially obtain a compact and chalky paste which, with aging, becomes creamy and takes on complex and unique flavor nuances. DETAILS 100% Made in Italy Rind: in the fresh product it is smooth and clear. It becomes dark, grey-green and wrinkled in the matured cheese. In the more mature product there are characteristic yellow moulds. The rind is not edible. Paste: white in color, slightly grainy solid structure. It becomes more compact, soft and meltable as the cheese matures. The flavor is fine, refined and complex; moderately piquant, with the possible presence of natural marbling if very mature. Maturation: the cheeses are matured in cool, humid environments on white fir boards for a period that can vary from 30 to 90 days. Use: a refined table cheese, it is also used in cooking.
