It is produced with local whole milk from two consecutive milkings of the "Pezzata Rossa d'Oropa" breed of cattle, bred according to traditional methods. It has a sweet, pleasant and delicate flavor. The soft consistency of its paste is ideal for long aging. Fresh mountain milk is processed to obtain a softer and more stringy paste ideal for the preparation of the traditional polenta concia, made with Maccagno, flour and butter. Paste: soft structure with regularly distributed thin holes. It is white in color with straw-colored nuances. The flavor is sweet, pleasant and delicate. Maturation: the cheeses are matured in a cool, humid environment on spruce boards for a period of 60 days. Use: refined table cheese is also used in cooking for melting in polenta.
