GUARANTEED QUALITY Cheese produced with local milk Matured according to traditional methods in the cellars of Caseificio Rosso, in Biella, Piedmont. Cut, packaged and shipped directly from our farm store. Whole wheel in photo: 3.4Kg approx. Castelrosso is a refined and complex cheese made from local, whole, pasteurized cow's milk, using rested milk processing. It is said that this production technique was born a long time ago from an error: probably poorly preserved milk. Today it allows us to produce some of our best creations. We let the milk rest in the processing tanks for the time necessary to develop different acidity characteristics and initially obtain a compact and chalky paste which, with aging, becomes creamy and takes on complex and unique flavor nuances. DETAILS 100% Made in Italy Rind: in the fresh product it is smooth and clear. It becomes dark, grey-green and wrinkled in aged cheese. In the more mature product there are characteristic yellow moulds. The rind is not edible. Paste: white in color, slightly grainy texture. It becomes more compact, soft and meltable as the cheese matures. The flavor is fine, refined and complex; moderately piquant, with the possible presence of natural marbling if very mature. Aging: the cheeses are aged in a cool, humid environment on spruce boards for a period ranging from 30 to 90 days. Use: a refined table cheese, it is also used in cooking. Ingredients: Cow's milk, salt, rennet, milk enzymes. Guaranteed minimum weight portions.
