Matured for up to 8 months, this product develops intense and herbaceous notes, based on the tender and sweet paste. A true king among Piedmontese cheeses. DETAILS 100% Made in Italy Rind: it is wrinkled dark brown, there are characteristic yellow molds. Non-edible rind. Paste: tender structure with regularly distributed thin holes. It is white in color with straw-colored shades. The flavor is intense. Aging: the cheeses are aged in underground rooms on white fir boards for a period that can vary from 120 to 240 days. Use: it is used as a refined table cheese and in the kitchen for the preparation of typical dishes. Ingredients: Cow's milk, salt, rennet, milk enzymes. Guaranteed minimum weight portions.
