GUARANTEED QUALITY Cheese produced from local milk matured according to traditional methods in the cellars of Caseificio Rosso, in Biella, Piedmont. Cut, packaged and shipped directly from our farm store. Whole shape in photo: 2kg approx. Buongiorno is the Maccagno WITHOUT LACTOSE. Made from local whole pasteurized cow’s milk. A sweet and tasty cheese, lactose-free even at medium maturation (hand of 0.010g/100g), thanks to a special processing with the enzyme Lactase, which digests lactose for you. Produced for intolerants, pregnant women and anyone who does not want to give up the taste of Maccagno lightly. DETAILS 100% Made in Italy Rind: it is thin, gray-brown, in the most seasoned forms there are characteristic yellow molds. The rind is not edible. Paste: soft structure with thin, regularly distributed holes. It is white in color with straw-colored nuances. The flavor is sweet, pleasant and delicate. Better digestibility for those who are lactose intolerant. Maturation: the cheeses are aged in underground rooms on white fir boards for a period that can vary from 30 to 60 days.
