The Mun is the Mon ("Brick" in Piedmontese) of Caseificio Rosso: a medium-sized, seasoned, brick-shaped cheese inspired by traditional cheese making in the alpine valleys of Biella. It is made with local, whole, pasteurized milk from two consecutive milkings of grass- and hay-fed animals, according to traditional methods. Mun has a soft but compact paste. Its taste has a sweet base, but is intense and harmonious thanks to the organoleptic characteristics of mountain milk and the care taken in processing. DETAILS 100% Made in Italy Rind: it is thin, grey-brown in color. The seasoned cheese may have yellow and red colored molds. Paste: white in color with straw-colored nuances, it has diffused, thin and regularly distributed holes. Its flavor is intense and harmonious. Aging: the cheeses are aged for 45-120 days in underground rooms on white fir boards. Use: it is used as a table cheese and in cooking for the preparation of typical Piedmontese dishes.
