Cut, packaged and shipped directly from our farm store. Whole cheese in photo: 4,5Kg ca. TOMA da Polenta is a typical product of the alpine valleys of Piedmont. It is produced with local whole milk from two consecutive milkings of the "Pezzata Rossa d'Oropa" breed of cattle, bred according to traditional methods. It has a sweet, pleasant and delicate flavor. The soft consistency of its paste is ideal for long aging. Fresh mountain milk is processed to obtain a softer and more stringy paste ideal for the preparation of the traditional polenta concia, made with Maccagno, flour and butter. Discover the experts' recipe: DETAILS 100% Made in Italy Rind: thin, grey-brown in color, with characteristic yellow mold in the more mature cheeses. Non-edible rind. Paste: soft structure with regularly distributed thin holes. It is white in color with straw-colored nuances. The flavor is sweet, pleasant and delicate. Maturation: the cheeses are matured in a cool, humid environment on spruce boards for a period of 60 days. Use: refined table cheese is also used in cooking for melting in polenta.
