It is produced with fresh local milk, pasteurized and skimmed to obtain a low-fat cheese, with a soft texture and fine holes. DETAILS 100% Made in Italy Rind: thin, grey-brown in color. Non-edible rind. Paste: elastic in consistency, white in color with straw-colored tones. It has widespread, small and regularly distributed holes. Its flavor is intense and harmonious. Aging: the cheeses are aged for 60-120 days in underground rooms on spruce boards.
